Guilt Free: 15 Second Cake

Who doesn’t know the feeling of getting home and craving something delicious, chocolately and that can be whipped up in under 30 seconds? No-one? I thought not. I have the perfect, gluten and dairy free mini cake recipe that you will adore, and can make when the cravings strike!

The recipe is extremely simple and is made up of ingredients that you’ll always have lying around your pantry and fridge, which is one of the many reasons I love these quick and simple treats. I adapted it from a recipe my aunt came up with for gluten free brownies and a Paleo one I found.

Best - Before Cooking

For 1 x serving, you’ll need the ingredients:


1 x large egg

1 x level Tablespoon cacao

1/4 teaspoon baking powder

1 x level Tablespoon flour – I use potato flour to make my gluten free version

1 x Tablespoon milk – I use rice milk to make my dairy free version

1/2 x teaspoon coconut oil


2 x teaspoons honey


1 x sprinkle goji berries

1 x sprinkle coconut flakes


The recipe is simple, mix all the ingredients, except the honey and your toppings of choice, in a small bowl and distribute them into ramekins, then pop them, one by one into the microwave, for about 15 – 30 seconds each, depending on quantities and the strength of your microwave. If you prefer them gooey and fondant like, keep it closer to 15 seconds or if you are in the mood for a cake / brownie, keep it in for an extra few seconds.

Take the cooked cakes and drizzle a good helping of honey on top and then add your goji berries and coconut flakes to your cake of choice.

You couldn’t want a simpler, more convenient and scrumptious treat. They are the perfect size and satisfy chocolate cravings without having to spend hours in the kitchen or to make an entire batch of brownies.
