Coconut flakes
You’ll need:
1 x 500ML mason jar
1x cup cooked plain quinoa
1/4 x cup flaked coconut
1/4 x cup goji berries
1/4 x cup fruit salad


Simply layer the quinoa, coconut flakes, fruit salad and goji berries until your mason jar is full. At this point, you can choose to add a dash of hazelnut, rice or almond milk for a burst of flavour, otherwise the orange juice from the fruit salad works perfectly.

I can’t stress enough how quick, simple and absolutely divine it is, the plain quinoa makes a fantastic substitute for oats and the mix of fruit salad and berries give it a great pop of flavour!

It lasts for about a week, if you can keep it that long!
